Summer Asparagus Egg Cups

INGREDIENTS FOR 12 EGG CUPS: 
10 whole eggs

1/2 cup diced onions

1/2 cup diced tomatoes

1/2 cup diced asparagus

1 cup cut kale or spinach 

2 TBSP pesto

1/2 cup sliced basil leaves

2 tsp salt

*Feel free to also add more veggies here if you'd like. Sometimes I'll add bell peppers, broccoli slaw, garlic or zucchini. 

INSTRUCTIONS : 
Preheat oven to 350 and grease muffin tins with butter or coconut oil. 

In a large bowl combine all ingredients and mix thoroughly. Make sure that veggies are completely covered by the eggs. 

Distribute the egg mixture evenly amongst the muffin tins. 

Place in oven and bake for 25-30 minutes or until cooked through. The muffins will puff up just a little bit and turn a nice golden brown. 

Let cool and then pop them out and enjoy! Place 2-3 in a plastic bag to eat on the go. Enjoy these with a little bit of guacamole or hot sauce on top! 

Coconut Flour Blueberry Muffins

INGREDIENTS :: 
3/4 cup coconut flour

1/2 tsp baking soda

6 eggs

1/2 cup coconut oil

1/4 cup honey

1 tsp vanilla extract

3/4 cup wild blueberries

INSTRUCTIONS :: 
Preheat oven to 350

Mix all dry ingredients together

In a separate bowl beat eggs and then mix in melted coconut oil, honey and vanilla

Add the dry ingredients to the wet ingredients and mix well

Mix in blueberries

Pour mixture into muffin tins (makes about 12 muffins)

Bake for 25 minutes and let cool before serving! 

Coconut Kale Smoothie

INGREDIENTS :: 

1/2 cup organic coconut milk

Large handful of spinach, kale or greens

1/2 an avocado

1/4 cup frozen wild blueberries

1 serving protein powder (I like Ora Organics or Vega)

3-4 sprigs of mint (optional)

8-10 ice cubes

Feel free to add a bit of water for your desired consistency

INSTRUCTIONS :: 

Add all ingredients to your blender and blend until smooth! Enjoy! Serves 1

Yogurt Parfait

INGREDIENTS :: 

1/2 cup organic, plain, full fat yogurt

1/4 cup organic strawberries

1/4 cup organic raspberries or blueberries

2 TBSP flax seeds

2 TBSP hemp seeds

INSTRUCTIONS :: 

Layer 1/2 of the yogurt on the bottom of a glass or container 

Top with half of the berries, hemp and flax. 

Add remaining yogurt to the top. 

Finish by placing the remaining berries and toppings to the top of the yogurt and enjoy! Serves 1
